Spice Rub Ideas?

Hi all -

I'm making chicken fajitas for my parents tonight for dinner (yum!) and I want to use a spice rub rather than a marinade to flavor the chicken (which I will grill on the stovetop). Any suggestions on ingredients and amounts of each to use? Keeping in mind that my dad doesn't like things TOO spicey and I'd like to incorporate the following:

    Salt
    Black pepper
    Cayenne pepper
    garlic powder
    cumin
    ?chili powder
    . . . plus any other suggestions!

I don't know how much total you will need, but...

Salt -1/2 tsp
Black pepper- 1/2 tsp
Cayenne pepper- 1/4 tsp
garlic powder- 1 tsp
cumin- 1/2 tsp
?chili powder - if you are using cumin and cayenne I wouldn't bother, but you could replace them with this instead... it would be milder, but you could use a larger amount

personally I'd add about 1 tsp of onion powder as well.
. . . plus any other suggestions!

I'm hopeless on amounts, but as far as ingredients go, I've got a bottle of The Spice Hunter Fajita Seasoning (Salt Free). It says "Create spicy marinades, spreads, dips, and sprinkle on chicken or beef." The ingredients are: onion, garlic, ginger, paprika, jalapeno pepper, oregano, mustard, cumin, red pepper, parsley.

I haven't tried this mix yet myself, but the ingredients look really interesting. I would never have thought of either ginger or oregano in fajitas (although I put oregano in my chili).

You could also do a Google search on "fajita recipe" and see what turns up. I think there are recipes for everything somewhere on the Web.

I like using dried oregano in mexican cooking. I would add a teaspoon. Ground coriander would be good too. Also I think cumin is really necessary. I would add 1t. However keep in mind that I spice things up alot. Nevertheless without a jalapeno or something like that I don't think your spice rub could be too spicy! Good luck.

Thanks, everyone, for your feedback! They turned out pretty well, except that I used the grill pan and the rub started to burn after a while and the kitchen got all smokey oops. All in all, the fajitas got good reviews, though.

my "chili powder" has cumin in it- why I said you mgiht want to leave it out...
