Arrowroot biscuits (cookies)

My bf bought me a bag of arrowroot flour (without asking, just because I enjoy Newman's arrowroot alphabet cookies occasionally as a treat), so I had to find something to do with it! I found a recipe somewhere on the internet and modified it thusly:

2 tbsp vegetable oil
2 tbsp applesauce
1/2 cup sugar
2 egg whites
1/2 tsp vanilla
1 cup all purpose flour
1/2 cup arrowroot flour
1/2 teaspoon baking powder

1. Mix well oil, applesauce, and sugar. Beat in egg whites and vanilla.
2. Stir remaining ingredients in. Mix well.
3. Roll 1/8 inch thick on floured surface. Cut into 2 1/2 inch rounds. Prick with fork. (Ok, I cut the rounds, and they stuck to my counter! So I made little dough balls and flattened them slightly with a fork) Grease baking sheet. Bake in 350 degree F (175 degrees C) oven until golden, about 8 to 10 minutes. Allow a bit more baking time if rolled thicker.

Make sure you check them, because some of the thinner ones I made ended up really hard...but they are tasty and arrowroot is easy to digest, so they're happy for my tummy!

Hi,
I am glad I saw this recipe. When I was small we used to get arrowroot biscuits as I remember eating them. Unfortunately, now they are not available anywhere so I hope to make my own. Thanks. Jenny

kinda a cross between an animal cracker & a shortbread cookie yum!

Yeah, he loves to eat my cooking, and since he's over at least 3-4 days a week, he'll sometimes buy me stuff since he feels bad eating my food (though he's moving in with me next month )

But I agree with Shell's description of an arrowroot cookie. Believe me, my bf can't get enough of these. He helped me make some this weekend since I had run out of the last batch I made!

Another note: I also made some of Heather's Chocolate silk pudding this weekend....dipping the arrowroot cookies in the pudding is really, really good!
