Strawberry Cake

One of my friends used to make the yummiest cake with just two ingredients - yellow/white cake mix and frozen strawberries. She'd thaw the strawberries and drain them, then stir them into the cake mix and bake it. I absolutely love it, but my tummy didn't so much the last time I ate it. Does anyone know if Duncan Hines/Betty Crocker yellow or white cake mix is safe? I'm hoping it was actually something else I ate...

Could you try angel food cake? I saw a recipe on the favorite recipes page that called for angel food cake mixed only with crushed pineapple. No other ingredients used, not even the ones the box tells you to.

I suppose I could - I'm just wondering if the texture would work, since Angel Cake is so much different in structure.

Check the ingredients to make sure it doesn't have any dairy or some other trigger. I know that Duncan hines devils food cake doesn't have dairy in it because I've made it with modifications before and been fine but I'm not sure about their yellow cake mix. Do you add any other ingredients to the cake mix besides the strawberries?

Duncan Hines regular cake mixes are dairy-free. The problem is that you can't just make it as the box says - it ends up too high in fat, which is an IBS trigger.

Replace the eggs with egg whites or EggBeaters. Replace at least half the oil with applesauce (personally, I replace ALL of the oil... the cake is a little more dense, but I like it). You might also want to try mashing up the strawberries a bit, and folding them into the finished batter gently. Berries are insoluble fiber and if you're not stable yet, they can be as tricky as any of the others. Mashing them would make them a little easier to handle than whole berries.

Nope, strawberries are the only thing that go into it. So it must have been something else I ate...but I'll check the mix to make sure it's safe.


In other news, I tried a modification to the ADB recipe (sacrilege probably ) and it turned out great...
Follow the original recipe, but substitute brown sugar and add 1t cinnamon, 1/2t ground cloves and 1/2t allspice to the mixture of cocoa and baking soda. Yummy! The spices come from a cookbook called Chocolate by Nick Maglieri. It's a wonderful, wonderful thing, and I'm hoping to be able to adapt more of his recipes. If they work, I'll let you know!
