Chicken Vindaloo (Goan style)

This recipe needs to be modified please as it has a hell of a lot of chillies which could be reduced and tamarind (imli) which can be purchased from the Indian store. Cut down the oil.

Ing:
1 kilo chicken (cut into bit size pieces)
1/4 cup vinegar
2 tbsp. tamarind juice
1 tbsp sugar
12 red chillies (use the big ones and remove seeds)
12 flakes garlic
1 tsp. cumin seeds
1/2 tsp. tumeric powder
5 big onions
2 inch piece ginger
1/2 tsp peppercorns
6 green ghillies, slitted and remove seeds
salt to taste
4 tbsp. oil

Grind with a little vinegar 6 flakes of garlic, half the ginger, red chillies and whole spices to a paste. Heat oil and fry the onions, remaining ginger and garlic to a light golden colour. Add chicken, ground spices and salt and fry nicely. Add enough hot water to about an inch above the chicken and cook till chicken is almost done. Mix in the remaining spices and vinegar and cook till chicken is tender and gravy thick. You can eat this with rice, chapatti or bread.
