Artichokes Safe?

Would artichokes be safe (the kind in water, not packed in oil)? What about black olives? I guess those are a no-no, but I'm not sure. Cucumbers? I need some ideas for something else to add to the Italian Tuna, Lemon and Basil Pasta Salad to stretch it a little. Any other safe pasta salad recipes would be greatly appreciated. I need something that I can make ahead of time the night before my group comes over for lunch. Thanks!!!!

Artichokes are safe. Olives are good fat, but they are fat, so don't overdo it and be sure to eat them with soluble fiber. I have no problems with peeled, seeded cucumbers, but I wouldn't eat the peels or seeds. As for other salad recipes, check the index--there are both pasta and rice salads listed there.
