Okay, this is going to sound reeaallly strange. But I made the most delicious baked cheesecake style cake using.......... wait for it........ pureed chickpeas!! It was a rum and raisin cake and it was DELICIOUS!!? I used a tin of chickpeas pureed with a cup of SR flour, added some sugar and some eggs, and some rum soaked raisins, and it came out soooooooo moist that I can't get enough of it!! It doesn't taste at all of chickpeas, the peas seem to have just provided the cake with a really moist baked cheesecake style texture.

Who'd have thought!!!? If anyone is game to give it a try I can post the whole recipe. If you'd told me a year ago I'd be making a cake with pureed chickpeas I would've told you you were crazy!!

Of course I wouldn't tell anyone off the boards I made a cake with chickpeas...... I think I'd get locked up! Haa haa.

I'd LOVE to add a recipe like that to my "to try" list... I'm not eating GF or soy free, but it sounds too interesting NOT to try!

Sounds great, yummy, and nutritious! Was it hard to make? Do you eat it like a piece of cake?

I have some other chickpea based recipes that amaze people- one is a chocolate cake if I can find it.... its been a few years but once we get moved and I unpack my cookbooks, I"ll have to find that recipe, make it again and share it!
