Anyone Make Sausage?

I've been disappointed with the quality of poultry sausage I've been getting around here lately. It occurred to me that I have a food grinder that I've never used. Has anyone ever made safe sausage from scratch?

I've been getting the stuff at Fred Meyer's (chicken sausage) but I just hate having little hard things in my sausage and I just know they're putting icky stuff in there.
I've bought some other chicken sausage that was 'just ok' at other stores. None have really floated my boat though. I'm in Portland, but I think most of our store chains are similar. Can you recommend something?
BTW, your Easter cake is just precious! You are so clever.

Can you recommend something? QFC has some good ones, also PCC Health Food Store and the BEST selection is at Whole Foods...
