No-Bake Side Suggestions for Chicken Noodle Soup

This week is going to be a hard week for my BF at work and my tummy hasn't been doing well lately so I thought I'd make some basic homemade chicken noodle soup tonight for some comfort food. I wanted to make cornbread and biscuits to go with it, except my oven doesn't work. It's been broken and I've been too lazy to call my landlord (will be sending a note with the rent check tonight!).

Anyone have any suggestions for a yummy side to go with the soup that doesn't require an oven? I might get some sourdough bread if I can't think of anything, although I'd like to use ingredients that I already have. No time to bake it in my breadmaker either. A bisquick recipe would be great as I have the reduced-fat mix at home.

RF Bisquick Dumplings
3/4 cup soy or rice milk
2 cups RF Bisquick

Mix milk and Bisquick thoroughly with fork. Drop by spoonsful onto chicken, meat or vegetables in boiling stew (not into liquid). Cook over low heat for 10 minutes with kettle uncovered and for 10 minutes with kettle covered. Liquid should just bubble gently while cooking.

Makes 10 to 12.

You could always make polenta, or maybe pop some potatoes in the microwave?

I haven't done that in a while. Great! My suggestion was to buy rolls at Noodles and Co.

Thanks for the suggestions, Isabel! Unfortunately I burned polenta one time when I was trying to make it and haven't been brave enough to try it again. Which really sucks because my ex-boyfriend's grandma made the BEST chicken cachatorie!

I think I will get potatoes as back-up in case the dumplings don't work. I can always eat them for lunch this week if I don't use them.

Eh.. he says he did, but I can tell when he thinks a meal is great compared to "so-so". He did go back for seconds and then pointed it out so I'd see he did like it. LOL
