PASSOVER FAKE WHIPPED CREAM



1 EGG WHITE
1 CUP SUGAR
1 TEASPOON VANILLA
1 GRATED APPLE (NOT GRANNY SMITH, TOO TART) PEELED, CORED, AND GRATED, USING LARGE SIZE OF THE GRATER


MIX TOGETHER IN MIXER FOR 10 MINUTES. YOU WON'T BELIEVE HOW DELICIOUS THIS IS. SORT OF LIKE A SOFT MERINGUE. YOU DON'T REALLY TASTE THE APPLE…IT JUST MAKES IT TASTE GOOD!!


B'TAY AVON!!!!!!!

Recipe came from mom via a friend of hers... haven't tried it yet.

The newest Cooking Light has really awesome kosher recipes! I will post some when they put the recipes on line. Also Gourmet had some too but not as good. (The mags come on the same day which is so irritating.) Ok NO I was wrong. CL had recipes for haroset and Gourmet had the matzo based recipes that looked so good.
Also these say they are Passover recipes but wasn't Passover just a couple days ago or not? Excuse my ignorance please.

Amie, what kind of mixer? Blender or food processor or what? This just may be what I'm looking for ...........a whipped topping that is dairy free and soy free. There certainly isn't one out there you can buy that I know of.

starts april 23rtd this year... really late, and easter was early.... odd but not totally so...

I'd love some of the passover recipes if they are IBS safe!

it doesn't say, but I'd picture a actual mixer- hand or kitchen aid or something because you'd want whipped air into it... like beating egg whites.. and I was thinking it looked like a yummy dairy dfree soy free alternative too... though you might want to do something to the egg white to make it safe... raw egg is scary, but you can do that trick of tempering it without cooking it... I forget what its called...

If you buy packaged egg whites rather than buying eggs and using just the whites, they're almost certainly pasteurized, which should mean no worries about salmonella and other nasty stuff. I buy Papetti Food's All Whites 100% Liquid Egg Whites and they are definitely pasteurized.

This whip sounds yummy. My brother loves Heather's Pumpkin Apple Spice bread - he has no tummy problems, which doesn't seem fair since he already got the double-thick, extra long, perfectly curled black eyelashes - but he thought it would go better with whipped cream. I'll give this a try and if it's as good as it sounds, I'll surprise him with it when he visits this Summer. Thanks.

That is odd, because Christendom finally got the dates right this year- the full moon after the new moon closest to the spring solstice. But on another subject...I'll post some recipes as soon as they are put on the websites.

I made it several days ago. I used an 8-cup mixing bowl and it was a good thing I went large because, just like whipped cream, this really increased in volume.

I mixed it with a hand electric mixer for the full ten minutes - the first five on low to medium, the next five on medium to high.

It doesn't really taste like whipped cream - there's nothing quite like butterfat. It reminds me more of a marshmallow icing or seaform icing. But it's good! I served it over warm gingerbread and yum.

The only problem I had with it was that it's very, very sweet. I'm going to try less sugar next time - hope that doesn't screw up the chemistry.

you're welcome.. I plan to try it next week sometime... haven't made it yet.. but if it works that well its good to know... let me know about the sugar thing since I don't tend to like stuff like this very sweet...

Minnie,

The Orthodox Church, and most Eastern Rite Catholics, follow the "old" calendar, which pays more attention to making sure Easter falls after Passover. The Last Supper was a Passover meal, so it only makes sense that Easter would have to happen afterwords. In fact, we don't say "Easter," we say "Pascha," which literally means "Passover" -- because we consider the resurrection to be the "new" passover. Just FYI.

First, if there are passover recipies, can you put them into the Passover Recipe thread I started before? Thanks.

As for the lateness of Passover this year, it was a Jewish leap year. The Hebrew calendar works on a primarily lunar system, so every, Passover keeps getting earlier and earlier. But this year, Passover was scheduled to start in the spring. So it was a leap year, which means an extra month was added, pushing Passover well into spring. This happens something like 5 times every 19 years or so.

Avidan- sorry I forgot to cross post this, it was posted before the thread you started... but it is apparently yummy, mom sent it in her pre-pesach recipe list.. it was the only IBS safe thing in there this year...

with half the sugar and a braeburn apple and it is too sweet.. I used powdered egg white to replace the egg... next time I will use even less sugar, though the apples are super sweet... I added some vanilla and its YUMMY! the leftovers seem to be keeping most of their air and volume too.. I may try making this and freezing it at some point in the future!

1] where can I buy powdered egg whites?

2] how much sugar did you use exactly?

3] do you know if fugi or gala apples are as sweet as braeburns?

4]how much vanilla did you add? I'm no good at guesswork when it comes to cooking as I'm not an experienced cook.....yet. This diet and its major benefits in terms of how much better I feel are changing this!

5] please post f/u when you make it again and tell us how well did this recipe freeze.

I dont' see why not... but it might affect the flavor or consistancy- I thought it was too sweet as is..even with half the sugar- if you have really sweet apples you may not need more sugar at all... I was thinking of trying it that way!

I didn't freeze it but its still ok- less volume, but still whippy ad tastes good 2 days later in the fridge....

fuji is about level with a braeburn from what I recall..

I put in 1/2 cup sugar- too much for my tastes, DH liked it...

I put about a teaspoon of vanilla in- straight from the bottle...

I found powdered egg whites in the baking aisle at Meijers by the cocoa and shortening... it was a little can with the equivelant of 21 egg whites in it! I keep them for any recipe that uses raw egg though because its safer!

Mine kept edibly for several days in the fridge.

For this recipe, I used a liquid egg white, from a carton - they're pasteurized - but I love the powdered kind. They keep forever and I'll use them half and half with the liquid ones in some of Heather's bread recipes.
