Suggestions for Easter Brunch???

My inlaws always do a brunch after church on Easter Sunday. Well my mother in law will not be making anything that will be IBS friendly I am sure of it. So I was wondering if anyone has a favorite breakfast item that will be ok to sit in the car for about 1 1/2 and feed about 12 people. I am going to be bringing my own turkey bacon but want some substance as well! Thanks!

I'm taking waffles with me...I haven't decided if I am going to make them ahead of time or just take the batter and make them when we get there. Also - you could make your own pancakes.

There are a few recipes for this on the boards.

I know what you're going through because I'm doing the same thing for my grandmother's Easter Brunch.

I think I am going to bring my own strawberries too so I have some topping to go on them.

I am having a whole brunch at my house (even though I don't celebrate easter). I was thinking of strata or quiche type thing with egg beaters. try this list most have cheese, but are you one that eats a little cheese? I can't remember. It could be substituted too. here are quiches I suppose they will be fine in the car. Otherwise what about the cinnamon roll type thing someone posted? Or coffee cake. I think Casey had one that sounded great.

Thank you very much for all of the suggestions! I think that I decided on Pumpkin bread and a sundy brunch casserole from the recipe index! I really appreciate all of your suggestions!!!!
