Philippine Chicken - Slow Cooker

I got this from my Grandmother on my Dad's side, who is from the Philippines.... she would normally use 1 chicken cut up, but this should work just fine this way.

Philippine Chicken - Slow Cooker
4 servings

4 boneless skinless chicken breast
1 cup water
1/2 cup vinegar
1/4 cup soy sauce
2 clove garlic, sliced

Put all ingredients into crockpot; cook on LOW for 6 to 8 hours. Serve over rice.

Wow! This sounds super easy...I will have to try it soon! Maybe Thursday - I have a doctors appointment and not lotsa time for cooking that day!

This was so different, but very good. When I came home the house smelled SO GOOD! (That's one of my favorite parts of using the crock pot! LOL) It seemed kinda familiar when I first tried it and I think I figured it out - it kinda reminded me of pork & sauerkraut. I think it was the vinegar that did that.

I liked it - very good and SOOOO simple! Thanks Shell!

Did you follow the recipe exactly? And use 4 chicken breasts? Curious minds want to know!

I actually ended up using 5. I'd had a package of chicken breast, which I assumed had 4 in it like most, but it only had 3. I don't like having too little in the slow cooker, so I thawed out 2 more I'd had frozen to make sure there was enough to cook in there!

Hey Shell - have you tried my Pancit Bijon recipe? My husband is half filipino (his Mother was born in the Philippines) Very filipino and it was a total lunch staple for me.

No, I have not tried the Pancit Bijon but it sounds good...minus the cabbage

Are you leaving the chicken breasts whole or dicing them?

No, it does not bother ME but if it bothers you or others you can try this "soy free" Soy Sauce that was posted.

I don't cut the chicken before cooking... but I'm sure you could...it might make it even moister...which would not be a bad thing.
