I don't see why not. I have no idea what time and settings to use. I know some people bakes potatoes in the micro - this receipe should work too.

Do you use the big sweet potatoes. You know....the ones that look huge? Or regular size looking potatoes (smaller, usually, than other sweet potatoe). The ones I see in the store always seem to be so big. But if I was only eating 1/2 as a meal, that would work....but would I have enough of the other ingredients?
So, about what weight (or size) potato do you all recommend?
Thsnks all. Also....do you think I could make a batch of 4 and freeze 3 of them for later meals?

Hi Beth -
I use two of the larger sized sweet potatoes. I don't weigh them so I can't get more specific than that - sorry! I eat either a half with some kind of chicken and a veggie, or a whole if I'm not eating much of anything with it.
I'm not sure about freezing them - I never tried it - these don't last that long in my house
