Quick Chicken Chow Mein/Chop Suey

This is what we always called chow mein, but the recipe I modified it from calls it chop suey. Either way, it was really tasty!

1 lb chicken breasts, cut on the diagonal into thin strips
1/2 cup chopped onion
1-2 cloves garlic, minced
1 can (15 oz) chicken broth
1 cup chopped celery
1 can (8 oz) sliced water chestnuts, drained
1 jar (4 1/2 oz) sliced mushrooms, drained
1/4 tsp ground ginger (I used 1 tsp grated fresh)
1 can (14 oz) bean sprouts, drained
2 tbsp cornstarch
2 tbsp soy sauce
Hot cooked rice

In a large skillet or wok, cook the chicken, onion, and garlic just till the chicken is lightly browned. Add all but 1/4 cup of the broth and the next 4 ingredients. Bring to a boil. Reduce heat, cover, and simmer until the chicken is cooked through and the celery is tender, 10-12 minutes.

Stir in bean sprouts. In a small bowl, combine the cornstarch, soy sauce, and remaining 1/4 cup broth; stir into skillet. Bring to a boil, cook and stir for 2 minutes or until thickened. Serve over hot rice, with additional soy sauce, if desired. Serves 4.

thank you, thank you, thank you, thank you, thank you, oh did I mention....thank you!!!!

I absolutely LOVE chicken chow mein!! I cooked this tonight (yes I am a guy that cooks for myself, hehehe) I made a shredded brocoli coleslaw stirfry (by adding veggie stock and cornstarch) and cooked white rice...I mixed some of the rice and brocolli stirfry together and made my own egg rolls......WOW I am in heaven!!

Glad it was such a hit! It's one of my favorites, too - I always loved chicken chow mein, and this was the closest I've come to it actually tasting like what you'd get for takeout.

I think I just had this for dinner! Except with tofu, instead of chicken. You're right--it's always a great recipe. And fast. I like sticking in a little watercress or a few spinach leaves. But that's just me. It's one of those classics.

The only difference is the egg noodles....I used the orangey ones that I feel have the most crunch...cant remember what they are made of...I had no trouble! DW loved it too, so it is a tremendous hit! thanks

Casey, do you think I could use home-made chicken broth or would it not taste right? (I'm prob gonna have to wait until after Passover to have this...no rice allowed for me!)

Use about 2 cups of it, and it should be absolutely delicious!
