anyone have any ideas what I can do with these. My DH bought a huge package of them & other than breading & baking, I was wondering what I can make. I need something easy since I'm not really a good cook.

coconut chicken hakka ginger chicken
Here are 2 recipes that are easy and use thighs as the original recipe. The thing is that dark meat is quite fatty and can be too much for some people. It seems though that many people here eat it in limited quantities and so if the rest of the meal is really low in fat it will probably be okay. Another thing to do is just pour teriyaki sauce on and bake. ALWAYS take off the skin before cooking!
