Garlic Brown Sugar Chicken

This is a funny and flexible recipe. For one thing, I've always cooked the chicken frozen (I never remember to thaw it ahead of time), so if you're better-prepared than I, keep a close watch on the cooking time. For another, I've used a tablespoon of lemon juice and one of water in place of the soda (I wouldn't want anyone to be tempted to drink the rest of a can of 7-Up and trigger their IBS!). Finally, if you don't cover the skillet, the sauce will reduce to a glaze, and this is how I've always made the chicken, but my parents' skillet does have a lid, so I know that if you do cover the skillet, you'll wind up with more of a traditional sauce, and it won't be quite as spicy, either. Anyway, do try the recipe!

Garlic Brown Sugar Chicken

3 boneless, skinless chicken breast halves
1/2 cup packed brown sugar
1/3 cup vinegar
2 tablespoons lemon-lime soda
1 to 1 1/2 tablespoons minced garlic
1 tablespoon soy sauce
1/4 teaspoon cayenne pepper

Place chicken in a large Ziploc bag or plastic container. Combine remaining ingredients, pour into bag or container and seal. Refrigerate 2 to 4 hours. Transfer chicken and marinade to a large skillet and bring to a boil. Reduce heat and simmer 45 minutes or until juices run clear. Serves 3.

Tess - I'm dubbing you THE HAPPY COOKER! You have posted some great recipes--especially the Sweet and Sour Cabbage Stew Soup. That was great. I just finished the rest of it the other day for dinner.

This recipe sounds great too. I suppose if you reduce the cayenne, it won't be as spicy. We can't tolerate really spicy foods. I'll let you know how it turns out. Thanks.

It wasn't me who posted the cabbage dish--it was chemegurrl--though if it's that wonderful I'll have to try it sometime .
