Tofu help, please!

Hi!

I want to make egg whites with tofu. I bought the soft tofu by Nasoya for dips, dressings, etc. I want to use the tofu with my scrambled eggs as like a sour cream topping type of thing. What is the best way to cook it to get it to that consistency? The leftovers I would like to use as a yogurt substitue...is that possible? If so, how do I do it?

Hi Ruchie!

I would just buy a non-dairy sour cream (Tofutti) or soy yogurt (So Nice, there are lots of brands).

What I have done before is take some vegan yogurt, add it and an advocado to a blender with a touch of lemon juice and top that on a potato. Yum.
