Baked Chicken with Tarragon

Yummy too...
2T low fat plain soy yoghurt 2T dijon mustard 2T lemon juice 4 small chicken breast fillets salt and pepper 1/2C fresh chopped tarragon leaves
Serves four (4.3g fat per serve)
1. Preheat oven to 190C (375F) 2. Cut 4 pieces of foil large enough to enclose chicken. 3. Combine yoghurt, mustard and lemon juice. add chicken and toss until well coated. 4. Place chicken on foil, sprinkle with s and p and top with tarragon. 5. Bring sides of foil up around chicken and fold edges together to seal. 6. Place in baking dish and bake for about 40 minutes or until chicken is cooked through. 7. Serve with plenty of rice to soak up juices.
The chicken comes out so tender!!! We really liked this one.

Oh gosh!
Thank you so much for the kind compliment and I love sharing recipes with people that I have found yummy (and most importantly safe!). I kind of really enjoy cooking I guess.
But I don't know whether I'm up to Sharon's standards!
Seriously though you've made my day and I shall keep posting recipes I find in the hope that it will help others.
