Sweet Potato, Carrot and Ginger Soup

Also yummy....
1kg (about 2lbs) sweet potato, peeled and cut into small chunks 3 carrots, peeled and chopped 2 potatoes, peeled and cut into small chunks 1 onion, finely chopped 3cm (approx 1 1/4 inch) piece of ginger, grated 4C fat free chicken or veggie stock
1. Place all ingredients in a large saucepan and bring to boil. Simmer uncovered until veggies are tender.
2. Blend in batches until smooth. Return to the pan to reheat.
This was a really simple soup but a big hit with my family.

Kerrie - tried the soup today. Yummy! I spiced it up with a little salt, pepper, & just a touch of cayenne. It was so easy to make! I could definitely do this one on a week night. Thanks for the recipe!
