Chocolate Pecan Thins

POINTSŪ Value ' 2
Servings ' 18
Preparation Time ' 15 min
Cooking Time ' 12 min
Level of Difficulty ' Moderate

Ingredients

36 pieces pecan halves
1/2 cup sugar
2 Tbsp butter
2 Tbsp apple butter
1 large egg white(s)
1 tsp vanilla extract
1/4 cup unsweetened cocoa
1/3 cup all-purpose flour
1/2 tsp baking powder

Instructions

Preheat oven to 350°F. Place pecans on a cookie sheet; bake until nuts begin to brown and are fragrant, about 5 minutes. Remove; set aside.

Combine sugar and butters in a medium bowl. Beat on medium speed with an electric mixer until soft. Add egg white and vanilla; beat until combined, scraping mixture off sides of bowl as needed.

In a medium bowl, whisk together cocoa, flour and baking powder. Add to butter mixture; beat to combine.

Drop dough by even teaspoonfuls, about 1 inch apart, onto 3 ungreased cookie sheets. Place 1 pecan half on top of each cookie. Bake for 12 minutes; remove from oven and allow to cool on pan for 5 minutes. Remove cookies with spatula to a rack to cool completely. Yields 2 cookies per serving.

These looked good and I think the only thing you really need to subsitute for is the butter, and it's not even that much! I bet they'd still be good even if you left off the nuts if you can't tolerate them. I'm going to try these soon but someone let me know if you get to them first!

and they were actually quite good. The picture makes them look like they'd be really crunchy, but I baked the second batch a little less and they are soft and fudgy. I didn't have anymore butter and had no apple butter either so I just used 4tbsp of canola oil. Since it's not that much I'd assume you could maybe do 2 tbsp of oil and 2 of applesauce to reduce the fat a little? Everyone liked them and they are overly sweet (I sprinkle a little sugar on top of mine too) and great for a chocolate fix!

Did you end up following the recipe with the butters? I'm just curious how they turn out with that.

Glad the family liked them too!

I baked these last week, for 8 minutes, and they were so GOOD!! It has been along time since I had a safe cookie, and this one is my favorite now. I put chopped pecans on top. Thanks alot for sharing.
