recipe experts.. peppermint fudge cake

hey.. do you think this would work to turn into muffins. I love the cake.. but I live alone and will become very fat if I have a cake sitting around the house. This way I could make a smaller batch.. or freeze the leftover muffins.


Any tips?

I think it would work fine as muffins...I'm just not sure of the oven temp/time to bake it. Either that or make the cake and cut it into slices and freeze portion sizes.

I've done it before. I think the time would be like 20-25 min. like normal cupcakes are but don't quote me on it. Just keep checking it. I'm sure the smell would give you a clue to when they are about done.

I actually don't have a bundt pan either.. which is why I was thinking cupcakes would work well...

has anyone tried them in a regular old pan you'd bake brownies in?!

I've made it in a muffin tins (forget the length of time, but 325 is the temp I bake most everything at)... 2 8" round cake pans, an angel cake pan, umm.. I htink it would work in a 9*13 too.. I'd start checking after about 30 minutes... it should take less time then in the bundt pan to bake...

I didn't read the other replies yet, so I'm sorry if this is a repeat of what anyone else said, but I do this all the time with the chocolate-applesauce bread, which is actually almost exactly the same recipe (but with vanilla and spices instead of peppermint). I fill standard muffin tins about 3/4 full, and find it takes about 25 minutes to bake them. And they do freeze well, by the way.

Here is a chocolate muffin recipe I love and you could use the time frame etc to see what to do OR if the pep. fudge cake doesn't work that way you can make these cocoa muffins.
