Baked Goods: Freeze, thaw, can you then refreeze?

I made the Sunshine Bread (thanks Heather for another wonderful receipe!) I took it out to thaw for hubby on Sunday night. He only had very little of it and now has left on a business trip and won't be back until late Friday night. There is an entire loaf left! My question is can I refreeze?

I freeze, rethaw, and freeze bready things all the time... sometimes they get a little on the stale side once you rethaw, but I figure as long as they don't make me sick, I can live with stale.

Thanks, I am going to throw it back in right now. The bread is pretty involved to make and I would prefer DH have it for when he gets back.

I probably won't do this again. When I thawed for the second time. The bread very quickly began to weep. It just did not taste "right".
So we did have a few pieces for the first day and then it became "wet" and almost started to collapse on itself. So, I threw it away.

I mentioned freezing desserts for this afternoon and she was like fine, but make sure your not making too many.. I figure my office is having a party monday and I'll bring them in...
normally what I do is freeze pre-sliced or muffin sized baked goods (mini or regular muffin pans get used a ton in our house) so I can just defrost what I want to eat and the rest stay frozen for when I want to eat them.. works well... and I dont' get tempted by the entire pan of brownies if I've just defrosted 2 mii muffins then thats what I eat.
