Question on tofu recipes

I made the praline pumpkin pie from Heather's recipe, for Thanksgiving. It was very good, but I did not know if I could freeze it, or how long it was good to eat, before I had to throw it out. I have never used tofu before. I would like to make her Better Than Cheesecake for X mas. Thanks for your help.

I always hear different on how fast you have to use tofu, I think it is about three- four days. I personally would eat it up to a week, than toss the leftovers. That may be risky, usually if I am cooking with it I only make enough for three- four meals so it is done by then. I made a sweet potato pie with tofu for Thanksgiving and it is now six days old and I have still been eating it, and I have been fine. I do not think it would be good to freeze, it would probably mess with the taste, but that is just my non-expert opinion. Oh, and heather has a five-minute pumpkin pie recipe and it uses soymilk, not tofu, and soymilk stays good for 7 - 10 days. If you do a search on this board you will find it. I have not tried this recipe yet, but may for Christmas.
