This recipe is an adaption from the Company's Coming version of Eggnog Bread. I haven't tried it yet, but have been on the hunt for a recipe "we" can use. I have made the regular Eggnog Bread which is good. I think with these adjustments it should be good. You can omit the candy.And best of all it is NOT high in fat.Iv'e added the nutritional contents too. Hope this works someone let me know, hmmm Maybe Kree !!

SilkNog Holiday Candy Loaf

1/3 cup applesauce

2 large eggs = or egg substitutes

2/3 cup granulated sugar 150 mL

2 tsp rum flavouring 10 mL

1 tsp vanilla 5 mL

1 cup SilkNog 250 mL

2 1/4 cups all Purpose Flour 550 mL

2 tsp baking powder 10 mL

1/2 tsp salt 2 mL

2 rolls butter rum-flavoured doughnut-shaped hard candies (3/4 oz., 25g., each) 2 rolls


Preparation


Beat first 6 ingredients together well in large bowl.

Add Flour, baking powder and salt. Stir until just moistened.

Put unwrapped hard candies into resealable plastic bag. Seal. Pound until candies are broken into small pieces. Reserve about 1/4 of candy pieces. Add remaining candy pieces to batter. Stir gently. Turn into greased 9 x 5 x 3 inch (22 x 12.5 x 7.5 cm) loaf pan. Sprinkle reserved candy pieces over top. Bake in 350°F (175°C) oven for 50 to 55 minutes until wooden pick inserted in centre comes out clean. Let stand in pan for 10 minutes before turning out onto wire rack to cool. Cuts into 18 slices.

Shirl, that looks awesome! I have no clue if the butter rum Lifesavers are safe, but other than that it looks wonderful. I just want to check, is 3 cups of applesauce right?? It looks like an awful lot compared to the amount of flour. Just checking, b/c this is definitely something I'd like to try. I love Silk Nog!
