Fruit Noodle Pudding

Fruit Noodle Pudding

12-16 oz box wide eggless noodles
4 1/2 Tablespoons margarine
12 eggwhites, well beaten (original calls fo 6 whole eggs)
1 1/2 cups sugar
1/2 teaspoon salt
1 - 16 oz. can drained fruit cocktail
1 - 7 oz. can crushed pneapple, NOT drained
2 teaspoons vanilla

Cook noodles and drain. Mix all ingredients and add noodles. Put into 13x9 pyrex (sprayed with Pam or some other substitute spray) dish. Cover with foil and bake 1 1/2 hours at 350.

This sounds pretty tasty! I will probably cut it in half and use Eggbeaters instead of egg whites, and I will be sure to post when I get to try it!

is noodles pasta noodles or oriental noodles?
and is 4.5 tbsps margarine a lot of fat or am I just used to having so little that it sounds a lot?

Pasta noodles. If you want, I can take a picture of an "egg" noodle so you can see what the recipe calls for, if they're called something different over there.

Hmm... you know, I think I had skimmed over the margarine part. Heh. I think it would probably still be ok; a 13x9 pan is a pretty large pan, so this would be 8 servings... about a half tbsp per serving... not horrible. You could try decreasing it if you really wanted to, though - don't substitute (applesauce, etc), just decrease.

Well, no... although I think that if you couldn't find yolk-free egg noodles there, you could take a pasta like that and break it up... you want something that's flat, and in smallish pieces.

Yay, I know what that is-its pasta pieces, I think they are called pappardelle. Not sure about the yolk free but I can eat pasta with egg in it without a bad reaction.
