Recipes for summer foods (tomatoes, strawberries)

Summer is upon us and I'm new to the recipe board. Can anyone suggest some recipes to incorporate tomatoes safely in the IBS diet? I love them and they are good for you. Also, does anyone have a recipe that includes a safe way to incorporate strawberries. I love them but can't tolerate them fresh.

As for tomatoes, and strawberries, for that matter, they are so good for you that you should incorporate them. As a rule of thumb, the more pureed and/or cooked they are, the more tolerable. I eat strawberries all the time in smoothies. With a banana and soy milk it's a yummy summer treat. I also posted a recipe for strawberry pie which purees and cooks some of the strawberries a bit, making them more tolerable. Try a few diced fresh strawberries with a piece of angel food cake - the cake will help.
As for tomatoes, I can't tolerate them at all raw. You might find them OK in salsas, dips, etc. If you can't, try tomato sauces - they really are wonderful with fresh tomatoes. You can always roast them a bit or cook them very well and puree them. I hope this helps.

i do okay with homeade tomato paste- but the jarred kind- forget it!
