French Toast Casserole

French Toast Casserole

1 loaf (10oz) French bread, cut into 1-inch cubes
2 cups egg beaters (or 16 egg whites, beaten)
3 cups plain soy or rice milk
4 tsp sugar
1 tsp vanilla extract
3/4 tsp salt, optional

TOPPING:
2 Tbsp soy butter, cubed
3 Tbsp sugar
2 tsp ground cinnamon
Maple syrup, optional

Place bread cubes in a 13x9x2 in baking dish sprayed with cooking spray. In a mixing bowl, combine egg beaters (or beaten egg whites), soy/rice milk, sugar, vanilla and salt (if desired). Pour over bread. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Dot with butter. Combine sugar and cinnamon; sprinkle over the top. Cover and bake at 350 for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes. Serve with syrup if desired. Yield: 12 servings

OMG you just made me so hungry!!!! I am going to try this on Tuesday when everyone is home thanks!!! I can't find stick soy butter. Do you know if I can't belive it's not butter light is safe????

I would say no, not if you're trying to avoid dairy... Sorry . Can you find any veggie or soy butter in the tubs?

I found Spectrum Butter Subitute, but I tried to use it in the soup I made tonight and it wouldn't melt?? So I dumped it and started over with I can't belive it's not butter light. I didn't eat any of the soup because of Milk mix up.
Hubby said it was great though Anyway I am not sure if it would work in this since it won't melt. What do you use???

I have both the sticks and the tub. For both I use Earth Balance... they're 100% vegan, rather than soy. I don't know what to say about the I can't believe it's not butter. Does it for sure have dairy in it? If so, is there any place even somewhat near you that would sell natural foods??? That's where I get mine.

an easy sub. It doesn't have any dairy -- but you do have to use the light version.

Nope!! Hubby was supposed to be able to get out of work early today (since it is suppoed to be his day off) But is 5:00pm and he's not home yet so I guess that isn't happing. He wanted to go the store with me. So I guess I will just go tommrow!!!

Ok I made this just like the recipie says. The only thing I changed was I used white bread insted of Frenc Bread. It was all mush!! I cooked covered for 45 min and even put it back in for another 16 min. Sill one big pile of mush!!! I threw it away!! Any suggestions!!!!

Awe!!! I'm sorry it didn't work for you. What a bummer! I haven't acutally made this one yet. I came across it when I was looking for other recipes and it just sounded so good. I am thinking however, that maybe you should have used French bread instead of white. French bread is a little more "tough", especially if it's a day or two old. I hope it works out for you next time!

I made this over the weekend. It was very good - but very filling. I used French bread. While cooking the bread increases in size. I will freeze about half of it and the other half I will be eating ALL WEEK...... Anne
