This is a recipe I came across in Simply Vegan Cookbook...

1 c cornmeal
1 c whole wheat flour
1 TB baking powder
1/4 c oil
1 c soymilk
1/3 c molasses or maple syrup

preheat oven to 375DEG. mix ingredients. pour batter into lightly oiled 8" round pan. Bake for 20 minutes. Serves 6.

Anyone think this is safe, since the 1 cup whole wheat is counteracted by the one cup of cornmeal soluble fiber? I know I could probably sub in unbleached all-purpose, but if it is safe enough I thought maybe this would be a good way to get in the whole grains that I have still been avoiding.

Dear Sheri;
I would definitely think that recipe would give most of us a VERY bad night,having not only one cup of whole wheat flour,but even worse,a cup of oil.But I am a HUGE cornbread person so I'd love to fool with a cornbread recipe until I get it IBS safe and it shouldn't be TOO hard to do.For example,in this recipe,just replace the oil with pureed blueberries(blueberries go GREAT with cornbread)and substitute a good refined white flour and you should have a great bread recipe.In fact,I may try that one,what's the rest of the board think?
Sincerely,

That looks safe except for the fact that it's made entirely of whole wheat flour. I know some people tolerate that better than others, but for most of us that might be a problem. But it looks like if you replaced half the flour with all purpose flour you'd be good!
