Mexican Meatloaf

Mexican Meatloaf

2 lbs ground turkey breast
2 cups crushed corn chips
1 cup grated soy cheddar cheese
3/4 cup salsa
4 Tbsp taco seasoning
1/2 cup egg beaters

Combine all ingredients in a bowl; mix well. Shape meat mixture into a loaf and place in a slow cooker. Cover and cook on LOW 8-10 hours.

Ok this may sound stupid but what the heck is crushed corn? Where do you find it in the grocery store. Or do you have to crush it yourself. I feel like an idiot just typing this, but it sounds realy good and I don't want to screw it up.

I think you just buy regular canned corn and crush it yourself!

BTW...there's no such thing as a stupid question!!!

Well, now... could that be any simpler? LOL I think maybe I'll try it with creamed corn... even if it is sweeter, it would be tolerated better.

Sorry everyone!!! I guess when I posted this yesterday I wasn't completely with the program. I reread it too, and still made this stupid error, but one that I think is important. I've corrected the problem in the recipe already, but just in case...it calls for 2 cups crushed corn chips, NOT CORN!!! No wonder it sounded goofy!

I made this about 2 weeks ago. Both DH and I loved it. There was plenty left over, and none of it went to waste. I really enjoyed cutting off a couple slices and reheating them by sauteing them in a small pan, and putting them between to pieces of bread with a little ketchup. YUM!

Is the taco seasoning like the bottled sauce? Or is it the powdered kind that comes in an envelope?

edit - Also if I only make half this recipe should I change the cooking time?

I haven't made this but I'm pretty sure it's the dry kind that comes in a pouch. The recipe also calls for salsa (which to me is awfully similar to the liquid taco seasoning) and I think that if you added liquid taco seasoning along with the salsa and the egg beaters you'd end up with too much liquid. So I say use the dry taco seasoning.

Be cautious with dry taco mixes - I haven't been able to find one that doesn't have MSG or some relative of MSG. Here's an old post where I give a link to a Mexican Seasoning with no MSG that you could probably use in place of the taco seasoning and a link to a recipe for your own Taco Seasoning spice mix.
