Chicken Chow Mein??

Hey all - I've been searching the board for some info on chicken chow mein ... anybody know the ins-and-outs of it? What are the noodles made with, and what type of sauce is on it? I've been eating it like crazy, getting it from the local Safeway (I'm not sure if it's safe - it sure doesn't seem "safe" like rice does). It hasn't hurt me yet, other than being positively stuffed when I eat too much, and if I didn't have it I would only be eating rice and rice crispies ... I'd like to maybe make a big batch of it myself, but don't want to get all the ingredients until I know if I should even be eating it. Any help you guys could give me, would be great! Thanks!

and it was really good. The sauce is awesome..
I added 1/2a can of waterchesnuts and a stalk of celery cut up really small to give it a little more substance.
it came out awesome (could have been better because I overcooked the rice noodles.. but better luck next time)
