I am a McDonald's french fries freak!!! I have the worst weakness for them, but due to IBS (obviously) I can't have them.   Well, this is as close to the real thing that I could get, and I eat them all the time!! 
Rachel's IBS Safe French Fries
2 large baking potatoes
enough salt to satisfy your needs (I usually use about 1 - 1 1/2 teaspoons)
cooking spray
Peel potatoes. Cut potatoes into 1/4-inch wide sticks. Place onto cookie sheet and spray with cooking spray just enough to lightly cover. Sprinkle with salt and toss to spread the salt around. Broil 15 minutes or until tender (or longer if you prefer crispy), turning every 5 minutes to prevent burning! Enjoy!!! Serves: 2

I'm eating these right now, and I have to say, they're totally hitting the spot! 
And I feel totally silly for having never thought of this before! LOL! Thanks for the idea!

Well DUH!! Why did I never think of this either?? (thinking TOO hard I guess) LOL  I'll have to try this very soon!!
