corn meal ideas?

I've been eating a lot of corn meal lately, but I was wondering if anyone had any recipes on IBS-safe corn bread or muffins. I'm getting tired of eating it plain as hot cereal.

there is a corn bread recipe in Heather's book "Eating for IBS"

preheat oven to 350F
1 1/2 cups soy milk
1 1/2 tbsps apple cider vinegar
1 cup yellow cornmeal
1 cup of unbleached white fluor
1/2 cup sugar
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/4 cup canola oil
1 organic egg white

Stir together soy milk and vinegar and set aside. Sift dry ingredients together in another bowl. Add the oil and egg white to the soy milk and vinegar.Mix well with whisk. Add wet to dry ingredients and mix with a few swift strokes. Bake 40-45 minutes in a 9 X 5 loaf pan.

Hi! I was just going to post this and and handful of other gluten-free recipes for someone who was looking for wheat-free ideas... The xantham gum and specialty flours can be found at health food stores or Whole Foods.

Gluten Free Cornbread

1 1/2 cups cornmeal or polenta
1/2 cup gluten free flour mix*
1 tsp xanthan gum
2 tbls sugar (this I leave out as I don't like sweet)
3 tsps g/f baking powder
1/2 tsp salt (I only put in 1/4 tsp)
1 1/4 cups soy or rice milk
1/4 cup canola or olive oil
2 large egg whites

* G/F flour mix - combine 2 cups white rice flour, 1/2 cup potato flour and 1/2 cup arrowroot or tapioca flour. (Use as required)

Preheat oven to 425 deg F. Grease loaf pan

1. In a large mixing bowl stir together cornmeal, flour mix, xanthan gum, sugar, baking powder and salt.

2. Make a well in the centre and put in the milk, oil and egg or egg whites. Mix well, then beat vigorously for 30 seconds.

3. Pour into prepared pan. Bake for 25 to 30 mins or until the bread begins to pull away from the sides of the pan.
