Yay Me! Baked Antidepressant Brownies. Now have ?'s

Hello

In a really good mood today; having read all the positive posts about the 'Antidepressant Brownies' I summoned up the confidence to have go at making them. I'm not naturally blessed with cooking skills and have to pour over Heather's recipe's to make sure I'm getting it right – this is after I've looked up what some of the ingredients are in the UK – ps. Little Minnie, if you are reading this, the web site you sent me is a God send. The pictures are such a help so I have a better idea of what I'm looking for. I'm definitely building my confidence with the cooking. I've marked all the recipes in Heather's books that I think I can do and that I'm interested in – really love the Japanese based recipes (miso paste is becoming a firm favourite) and I'm even getting adventurous with marinades! On Sunday night I made the wheat berry salmon dish. Even though the wheat berries take about three weeks (!) to cook it was worth it as they taste great.

Anyway, back to the brownies – actually went out this afternoon and bought a tin to bake them in (am so pleased I have got my American cup set – don't have to worry about converting the measurements) and they taste great! I saw that Heather added a note to the original thread saying that peppermint essence works well with this so I made one batch with vanilla essence (as per the original recipe) and one with peppermint. Both taste good, just wondering if I should have used both vanilla and peppermint in the one batch – apologies if this is a silly question, really am a very inexperienced novice cook.

Also, how long do they keep in the fridge (or do you keep them in the larder?) and can you freeze them? If you can do they take long to defrost?

Sorry for all the questions, really do appreciate any advice from the proper cooks on the boards. You never know, one day I might even post a recipe – once I make something that I can unleash on others!

I'm not an experienced cook either, but I do know that you can freeze the mixture - I've done that before to stop me eating them all at once!

Hi- just baked these yesterday for the first time--came out pretty good- and I am picky about brownies!! I am keeping them in the fridge as I live in Florida-very humid--but I am thinking you could freeze them--they are just cocoa and egg whites--good luck with your cooking adventures!

I put half the pan in the freezer, I cut them into squares and put them into a ziploc bag. They happen to be so good, that I eat them frozen, they don't get hard all the way through, just very very moist and cold, yummmmm!!
