I need help with a Carrot Cake

Ok so my DH b-day is coming and I always make him his favorit carrot cake. I was wondering how to make this safe so I could have some to. It also calls for cream cheese frosting so any ideas on a safe frosting would be very much welcomed. Here are the ingredients for the cake.
1 1/2 cups corn oil
3 eggs
2tsp baking soda
2tsp ground cinnamon
2cups grated carrots
1/2 cup crused pineapple drained
2cups sugar
2 cups flour
2tsp vanilla
1tsp salt
combine all ingredients in large bowl till well blended. Pour into a greased 13x9 inch pan and bake at 350 for 1 hour. cool then frost.
I hope I can find a way to eat this it would make it more speciale if we both can have it without having to think about me being sick.

Well, you could replace about 1 cup of the oil with applesauce and use 6 egg whites in place of the eggs... but did you realize Heather has a fantastic carrot cake recipe in EFI?? I just thought I'd let you know... it's tried and true. Good luck!

Carrot Cake

Unfortunately, I have no idea how to make cream cheese frosting "safe"... I don't think it's possible, because even soy cream cheese is pretty high in fat, if I'm remembering correctly (or am I thinking of the soy sour cream that's bad? help me out guys?).

Anyway, making the usual cream cheese frosting recipe using non-dairy ingredients is an option - soy cream cheese, soy milk, soy margarine - your local health food store should carry all of that. If it ends up being high in fat like I think it would, though, be prepared to scrape the icing off your piece! (Since you're not stable yet, I wouldn't risk it.)

they do sell non-dairy cream cheese. It's made by Tofutti!!
