I've added chicken or ground turkey before, but neither are required by the recipe itself...

start 2 days or more early... with the pot on low and filled with water and beans only... change the water 3-4 times before you drain the beans and add other ingredients...

1 cup dry red kidneys
1 cup dry pintos
1 cup dry black beans

(after 24 hours+ and the required changes of water every 6-8 hours, drain and rinse beans well...)

replace beans in crockpot and add:

3 cans diced tomatoes
1 red, 1 yellow and 1 green bell pepper
1-5 jalepen~os (to taste, can also use 1-2 haban~eros
1 sweet onion
2-3 cloves garlic
pinch salt
black pepper to taste
basil
parsley
optional ingredients:
use any 1 of the following to taste- NOT IN COMBINATION
1 tablespoon cocoa powder
sage leaves
rosemary leaves

chop all ingredients to bitesize or smaller, combine all ingredients in pot, including all liquid from tomatoes, and let simmer for at least 12 hours- I've left it on as long as 48 hours from this point, just YUMMY and more blended in flavors..

I've made it without any of them- just use one of the other options at the end to kick up the taste... works well for non spice eaters.. and tastes so good.. and without any possible contaminants if you can do the beans and green peppers.. I need to find my chocolate bread recipe and post it here too... its a basic dark bread and SO yummy with white flour, water, some sugar/yeast, and cocoa.. not really sweet, but wonderful with chili...
