1 bag Morningstar Farms "Burger" Crumbles
1 lg onion, chopped
2 cloves garlic, minced
16 oz can kidney beans, drained and rinsed
16 oz can stewed tomatoes (with juice)
1 tbsp chili powder
1 tsp cumin
1 tsp cinnamon
1/2 tsp salt
1/2 tsp Tabasco

Throw everything in the crockpot, give it a stir, turn it on LOW, and let it cook at least 6 hours, preferably more like 8. Serves 3-4 (yeah, it's a pretty small batch).

This makes a pretty mild chili; adjust Tabasco to taste.

You can also make this with ground turkey. Brown the turkey in a skillet first, and then add it to the crockpot with the remaining ingredients. You may need to add more salt if you use turkey, but wait till just before serving & season to taste. I'll tell ya, though... I've made it both ways, and the "burger" (soy) crumbles are actually better!

I've also made it on the stovetop, but really, it's better in the crockpot. PS - I've fed this to a lot of non-vegetarians, and nobody ever guessed it wasn't beef.

Cinnamon is the best thing in chili! My great-aunt used to make chili with teeny tiny diced pieces of steak (!! who has time to cut all that up?!) and a ton of cinnamon. That's where I got the idea from, and it's been in there ever since.

Unfortunately, I didn't have anywhere near the correct amount of chili powder, and of course I didn't want to go to the store... I think I had about 1/2 tsp. Regardless... both DH and I loved it. I think it was the cinnamon!

Yum!!! It was SO easy too!!

Hubby tried a small bite and said it tasted pretty good. Unfortunately, he couldn't eat any though, because it would aggravate his reflux. (But, more for me! J/K) I ate some last night, and packed up 3 servings in the freezer for future meals.

Thanks Casey!

I was just telling RachelT last night that I almost never make chili anymore because Adam can't eat it - he has horrible reflux, even with meds to control it. I *should* just make some for me, though. Glad you enjoyed it!
