Not Getting Enough Fruits & Veggies......

I've been keeping my journal of symptoms, etc. that I have to give to my GI doc in a month and have noticed, as I list what I have eaten, that I don't get near enough fruits and vegetables. For one thing I don't like most of them and for another thing....they usually cause an attack. So, what do you all do to get enough fruits and veggies in your diet. I eat applesauce and a banana here and there....but that's about it. I also eat potatoes....does that count?

Potatoes definitely count! Do you like cooked carrots? They're pretty easy to digest. Frozen peas work for me too. Fruit juices have less insoluble fiber and are less likely to cause an attack. Just be careful with citrus if you have GERD or are prone to heartburn. I love pineapple juice and also canned pineapple. Do you like berries? They're in season here right now and they're scrumptious!!

I have a lot of food allergies to fruits and vegetables. That may be why you don't like some of them -- wisdom of the body. I forced myself to eat canteloupe for years because it was good for me, then found out I'm allergic to all squash and related things grown on vines like melons and pumpkins!

I have a list of fruit and vegetable ideas for myself because I have the same problem getting enough. I'll go find it and repost it in case it might help you.

As many of you also know, I have real problems getting enough fruits and veggies for a healthy diet that's also IBS-safe. There's two reasons, 1) I have a lot of food allergies and intolerances, and 2) I have fibromyalgia which makes me too weak and tired to cook from scratch much. Which is why I started this list for myself a couple months ago.


Fruits:
Pineapple Juice
Canned Pineapple
Fresh pineapple in small quantities (acid)
Canned mango (thanks, Jen Scully)
For those not allergic to them like me, canned peaches and pears.
Citrus:
Low acid orange juice
Half grapefruit with sugar to cut the acid
canned mandarin oranges
Berries:
Strawberries, fresh and frozen
Blueberries, fresh and frozen
Raspberries, fresh in season
Craisins (dried cranberries) or raisins.

Veggies:
Potatoes (baked in microwave)
Sweet Potatoes (ditto)
Carrots (boiled)
Beets (canned)
Soups:
Borscht (Manischewitz bottled beet soup -- heavenly with boiled potato cut up into it)
Potato Soup (homemade)
Vegetable Soup (Campbells Healthy Request)
Green Pea Soup (Campbells)
Green Veggies:
Green Peas (frozen)
Green Beans (fresh or frozen)
Broccoli (florets only, small quantities)
Asparagus (well done, just the tips)
Lima Beans (frozen)
Bottled Tomato Sauce (over pasta, add sugar to cut acid)
Sundried Tomatoes
Roasted Peppers
Lettuce and Tomato on sandwiches
Small Green Salads
