Strange, my body has completely adjusted to every other change I've made. I don't have cravings for anything anymore. I developed a taste for all kinds of healthy foods and drinks. The only thing I miss is cheese. I've found some great subs for cooking with. But nothing I can eat by itself that seems to be anything like real cheese. I sure wish I could have some cheese. Mmmmm....cheddar. Ah well, if I have time to worry about cheese, my life can't be all that bad.

Hey,
I find myself craving cheese a lot of the time too! Sometimes I cheat and have a little. I find that if I have goat's cheese it doesn't seem to bother me as much, but that could just be my imagination! Have you found a good cheese to use to make pizzas? I have found some AWFUL ones! But I have found a good one now that I use to make a soy cheese pizza that will sometimes take care of the cheese craving. What sort of replacements have you found?

I use Soy-Sation for pizzas most of the time. It melts very well and tastes pretty good. I also use the brand Veggie. Only the mozarella for Veggie brand, the rest of the flavors don't seem to melt very well. Veggie does have a soy parmesan that tastes great. I can't even tell the difference. Maybe because I haven't had the real thing in so long. But still, it tastes pretty darn good.

I sneak a little bit of the real deal now and then, too. In fact, I had a bit tonight from my husband's side of the pizza casserole. It had this sour taste I don't think I ever noticed before...but it was sour in a good way. I love the Lisanatti Soy Station stuff. The rice cheese is okay, too, but it doesn't melt as well.
The ironic thing is I have to buy my Soy Station stash in Wisconsin...the DAIRY state.
They don't sell it around here, and Madison has the closest Whole Foods. The last time we were up there, I bought 3 chunks of the cheddar and 1 of the moz.
Do soy cows say MOO? Just something to ponder.

I've gone without dairy for so many years but used to cheat with pizza once in a while. That was when I just thought I was lactose intolerant. I always wondered why no matter how many lactaid pills I took. Wasn't till a couple months ago that we put together the IBS diagnosis.
Of all things, it's the cheese I miss the most.

I think I miss it more than chocolate bars! I have been on a hunt for months for a good soy cheese. I did find some shredded mozarella that was pretty good on nachos or pizza, but it's not the same.
I hope someone invents a good-tasting fake cheese some day soon. Kat
