Serious Food Rut, could use some suggestions

Hey Guys,

I'm in a serious food rut and could use some help. For those of you who remember, back last summer I was hardly eating, and ended up being hospitalized and worked with a dietician to get eating again. I no longer follow the IBS diet because it's not even certain that my probs are IBS related, and I seem to do fine with other foods. However, I still have some problems (caffeine, cruciferous veggies, whole wheat). Anyways, long story short, I've been eating pretty much the exactly the same thing over and over again since August and I'm sick of it! But I'm scared to try anything new plus I'm useless in the kitchen. Here's what I've been eating:
Breakfast: Quaker Instant Oatmeal
Lunch: Tuna Wrap
Dinner: Chicken Breat or Grilled Haddock Fillet w/ carrots or green beans and scalloped potatoes

That's it, and I just rotate it up by changing between chicken and fish and different flavors of potatoes

Anyways, I could really use some suggestions for some EASY meal ideas...doesn't have to follow the IBS guidelines, the most important thing I'd like to do is branch out my choice of veggies. Right now all I eat are potatoes, carrots, green beans and the occasional bit of squash. I don't do well with red meat or any spices.

So if you guys have any suggestions at all, I would really appreciate it I think I'm going to go crazy if I keep eating this stuff!

Do you ever shop at a health food store? There seem to be a lot of breakfast alternatives there, all kinds of waffles made of all kinds of grain or alternatives. Also, how are you with soy? I love morningstar veggie patties (fake sausage). To me, that IS sausage now.

Oh, I had this veggie pulled pork last week that was SO good, can't remember the name off the top of my head but at Jewel it was in the produce section by the veggie cheese stuff.

Have you tried any of the chicken recipes on these boards? I just made the garic/brown sugar crockpot chicken last night with rice and it was really good and my husband liked it too. He doesn't have dietary restrictions and so he's hard to please. But he liked it.
Also, try some ground beef type recipes but substitute ground turkey--that's all I've used since college before i even had problems. Tacos, meatloaf, burgers, etc. Tastes great.
For vegetables---maybe try zucchini, sweet potatoes, and peas. I don't do well with cruciferous veggies either but the above don't cause me problems. Good luck!
