I'm a newbie (books haven't even arrived, yet), but I know this is going to be a problem for me, too. I like Kappy's menu (I copied it and will use it), but I know I'll want something different for the evening meal..... maybe a stir fry with rice. I'm concerned, though, about giving up whole grains in favor of white rice, and I'm still afraid of pasta because I seem to be gluten-sensitive. Anybody else have these issues?

There is a rice pasta that is gluten free. You can get it at Walmart it is in a blue box. I think it is DeBoles or something like that. I don't know the exact name, but it is really good!

Gluten sensitivity/intolerance, up to and including frank Celiac Disease, is a topic that is gaining more interest among people with varying forms of IBD.

Now, IBD is something a bit different than IBS (Irritable Bowel Syndrome), which is what you are claiming here. Chrons disease, Ulcerative Colitis and Microscopic Colitis are examples of inflammatory type conditions that fall under the umbrella of IBD - which stands for (Inflammatory Bowel Disease).

A higher than average number of people with IBD, especially those with Microscopic Colitis, are known to be "gluten sensitive".

You may also like to search the Internet for some of their information where you will find some interesting discussions on gluten intolerance. Right now I guess I am at the point of questioning whether there is such a thing as being a "little bit sensitive" to something like gluten. – I'm really wondering if that might be like being a "little bit pregnant"?

It's all quite interesting and if we can learn to understand the nuances of food intoerances, it probably holds the possibility of relief from many GI issues that dog people.
