Hi I am new to the message board and I love the idea of reporting in. It helps to have support. I haven't received my EFI books yet but what I have learned so far I am starting to apply to my diet today.

It's not perfect but I am starting.
Breakfast: None
Lunch: Healthy Choice frozen meal
Dinner: Baked Tilapia, 2 flour tortilla, 1 small avacado

I need to start eating breakfast more and have more snacks during the day.

I think I may have some cammonmile tea before I go to bed.
For excercise: 2 half hour walks with Paulo (my adorable 4 year old chihuahua!!!!)

Scrambled tofu, zucchini, and scallions

Tofu-Miso soup (extra firm lowfat tofu, carrots, garlic, scallions, broccoli, garlic, ginger, baby bok choy, shiitake mushrooms, dulse)

More Monster miso soup

Salad: spring mix with tons of mushroom crumbles on top (portabellas, buttons)

Yuck--I've got one of those spring colds!

Kate.

Yum again. Do you add meat to it? I've only ever made it with eggplant, red peppers, tomatoes, basil and zucchini.

No. I sauté onions and minced garlic, then add red and green peppers and sauté some more, then add thinly sliced courgette/zucchini and top off with a tin of tomatoes, salt, pepper, tomato puree and some dried Italian Herb seasoning, and leave it to simmer for about 20 or 30 mins (until the courgette is cooked properly) I always forget to buy eggplant and am not really crazy about it so I just leave it out. I don't add meat, but sometimes I serve with chicken or shrimp and pasta.
