Doing GREAT food wise...kicked my own butt today.... 1 hour with personal trainer, 10 mins cardio before that... then 35 mins kickboxing.... I FEEL GREAT TONIGHT!!

Breakfast: Homemade banana bread from Eating for IBS; peach soy yogurt
Lunch: boiled potato, baked salmon, mixed salads
Dinner: Penne with prawns and a tomato sauce
Snack: Marshmallows (HUGE sugar craving, but I stopped binging after 100g ie half the pack which is not what I would have done last week )

Exercise: walked up and down the stairs at work to the 7th floor a whopping five times during the day, getting progressively better at it! Walked home from work, 35 mins, just under 3 miles.

Verdict: About 1750 calories, which is pretty good, and pretty good food, fresh things etc today, not a lot of iron though or vitamin K, looking at my fitday stats.

The nutritional notes on the "fitday" site are incomplete, so...while it's a great "guide" it's not missing some info.

I'm still not feeling meaty.

egg whites/zucchini/baby spinach
thai chili garlic sauce

blackbean/mushroom crumble creation (mushroom crumbles are wicked with black bean puree sauce. very "smokey" & "earthy")***I cannot believe how easy they are on my tummy when food processed***
with rainbow swiss chard puree
fresh limes, ancho chiles, cumin, scallions, and very small quantity of minced garlic, dijon, etc.
kalamata olives

more of the above black bean creation, later, for what I guess you could call "supper"
with spaghetti squash

& a few Immodiums, rotfl, for dessert
with some cocoa.
***that was quite a bit of fiber. also, sometimes when you food process everything you literally poop like a baby***

exercise: 1 hour walk OUTDOORS, in the woods outside of my house & back strengthening exercises.

UFO black coffee
& sugarless gum (I haven't smoked a cigarette--self-polluted--in over 14 weeks, now. Vive le difference)

I sort of take heed of it as opposed to look at it religiously, but it did inspire me to get some vit D and calcium supplements when I realised how little I am getting.

Thanks for the support too re binging, it's my downfall, Sinead and Sugar are a bad combination!

what brand salsa do you find safe? And did you have to work your way up slowly with the amount of beans you eat? Do you puree canned beans and use white rice?

Newman's Own Salsa (mild or medium).

Canned black beans w/ liquid, bring to a boil (I find that the WestBrae Organic black beans are more tender and easier to mash than regular grocery store brands. However, I haven't been mashing or pureeing them lately. A year ago, I started with a couple spoonfuls of black beans several times a week, now I can have 1/2 cup or so. I make sure to chew them thoroughly!)

I used Texmati long grain white rice, but I've also used brown rice. I sautee 2 T of chopped onion, 1 clove garlic in my rice cooker and add 1/4 tsp cumin. Then I add the rice and sautee that for about one minute, mixing the onions, garlic and cumin w/ the rice, before adding water. Once I add the water, I add three - five T of salsa on top, without mixing it in. The rice cooker does the rest. It's pretty easy!

Do you find that a rice cooker works for just single servings? You put all those ingredients in the rice cooker...the salsa too? Is the salsa extra chunky? All I can find is the chunky with green peppers in it. Don't they have just plain salsa without peppers and stuff?

This sounds delicious! But I'm not eating beans at all right now...so don't know how filling this would be yet. I would probably have to use white rice since I don't take a big SFS dose beforehand, don't ya think?

My recommendation would be to substitute a bit of tomato paste, canned tomatoes, or even fresh, chopped tomatoes if you can't eat peppers. You could also just have plain white rice with the beans - this is a tasty combo too!
