Well, I'm very frustrated!! I was very sick last week so couldn't do more than stretch bit I did 1.5 miles on the elliptical Sunday and physical therapy Monday and 2 miles today on top of my usual stretching. I've also been pretty good about what I'm eating. Today, I had oatmeal for breakfast, I have a Weight Watchers frozen microwaveable lunch, chicken and pasta I believe. I have some soy crisps for a snack, 110 calories there and I have a turkey sandwich already made for dinner. I haven't lost even one single pound in a whole week!!!!!!

I know I need to exercise more but with the fibro and RA I have to be careful with it. I'm going to try and add half a mile a week on the elliptical until I'm up to 5 miles a day. I'm not sure if thats realistic or not with my health issues but I'm going to try!

I haven't gotten consistant exercise in weeks except for housework.. but I'm going to correct that starting tomorrow- need to do something after work today or I'd start then!

2 luna bars.. half a slice of potato bread for breakfast (not repeating the recipe- icky!), a handfull of pretzels, and 1 salmon patty with mustard on a hommade hamburger bun (recipe I'll post later) and a ton of grape tomatoes and an ADB (I made them for another reason yesterday!)

My first post on the daily reporting. I'm trying to eat a more varied balanced diet (I get stuck in the same food all the time). Also trying to gain weight.

english muffin & Tofutti cream cheese
strawberry applesauce
turkey w/mayo & lettuce sandwich
blueberry muffin
butter chicken & shrimp with rice
vegetable soup
M&Ms chocolate (just a tiny bit, I'm a chocoholic)
pasta salad
brownie

Lots of dried apricots

About 4-6 oz. of pepper steak meat (NOT IBS safe...but Sarala-safe)

1/2 acorn squash

1/2 honeydew melon

A few bites of a brown and wild rice mix that needed chicken to go with it...not very good plain...so I only had a few bites

Dinner--About 1-2 oz. of pepper steak meat and a few bites of sweet potato

I did nothing, but here's what I've eaten.

Coffee with soy milk

egg whites
fresh dill, baby spinach puree

chicken breast
field greens
fresh really juicy lemons (juice & grated rind), lavender sea salt,
tarragon dijon for vinaigrette

maybe some almond milk cocoa later???

Laurel's quest to get back on track: Day 1

My main goal right now is to butch up, put on some muscle, and mostly get STRONG In a few months I will probably switch gears a little and try to lose just a wee bit of fat (for uh, ya know, bikini season and stuff... lol I don't remember the last time I wore a bikini, but still )


So this was today:


Morning (over about 3 hours, grazing pre- and post-workout):
750ml water + acacia
1 slice homemade french bread
1 large pancake w/applesauce
4 egg whites scrambled w/1/4 cup spinach and curry powder (makes 'em orange, and tasty )

Lunch/snacks throughout the day:
750ml water + acacia
1 cup rice w/1/2 cup romano beans and 1/4 cup green peas
2 single-serving bags baked lays


Dinner (aka grazing throughout the evening):
750ml water
1 cup minestrone soup (pureed) w/1 slice french bread
veggie burger patty w/1 cup rice and 1/4 cup green peas
1 cup applesauce
1 cup ff soy milk

Exercise
Morning: 30 mins weights workout
Evening: 15 min (vigorous) bike ride

OK so all in all, not a terrible day for Day 1. Boy does it feel good to get back to the weights For water I'm just over 2L - I know I feel better when I get in 3L, but 2L is good too. For calories, I'm not really counting but my rough estimate would be around 1900 - which is NOT enough (for me). (1900 is about my BMR + daily activities... minus the ~200-300 calories I burned in exercise, that puts me at a deficit, which is not where I want to be right now as I'm not looking to lose weight.)

Also I'm not too pleased with myself about those 2 bags of Baked Lays (processed junk... but oh, oh so addictive!) - but that's what happens when I get stranded at school in meetings running way overtime with no snacks in my bag. And I didn't do incredibly well with my fruit and vegetable intake today. But oh well... on to tomorrow. See you all then!
