Progress continues!

1/2 c of rice pudding/protein
1/2 c soy yougart w/ granola & protein
1 c naked veg burrito
1/2 c soy yougart w/ granola & protein & 1 c veggies/pasta (little too much, not bad)
banana, pumpkin waffle w/ 1/4 c (if that) yougart

must continue to cut down in the evenings but other than that, progress! 2nd day in a row without a stomach ache in the morning. YEAH!

Worked out again for some 3 hrs, vaccumed upstairs and downstairs as well as cleaned my room.

My depression is starting to grab hold of me firmly. I broke the promise I made to never cut myself ever again last night and am probably going to do it again. I don't know how much more I can take...

got off track a little bit--but today is the start of a new week! and the rush of weekend stress is behind me my foods:

BREAKFAST
-*orange juice
-*blueberry-flax cereal bar
-*med.pear
-peppermint tea w/*acacia

LUNCH
-*field greens sandwich [*safe bread!!]
-*peach applesauce cup
-*vegan veggie crackers

SNACK

-*supersweet corn bits w/*sea salt

-60-ish OZ/water--needs more!
-babysitting for 8 hours, long walk w/wagon

Blech...pretty awful cramping all day, but I think I did ok anyway:

*ginger granola with 1/2 banana and soymilk, lemon ginger tea

*boca burger with veggies

*soy crisps and a few strawberries, lemon ginger tea

*tempeh with brown rice, sauteed mushrooms, onions and red chard

Now I've got to go finish a paper, and then get to bed!

a tricky day - spent all day carrying heavy things around greenwich village for a reading at night. not a lot of chance to sit down with a healthy meal. and a cab ride early in the day got me nauseous, and i had trouble shaking it. hence the mid-day bread-ness.

ff devil's food cookie (i debated about posting this - i ate it in the morning, on my way out the door to work. i decided that i don't need to be embarassed about it. if i want a cookie in the morning, in context of healthy eating, then that's what i'll do.)

kate, that all sounds so good. two questions - what's your asparagus soup recipe? is it seasoned pureed asparagus, or a broth thing? also, what brand of rice parmesan have you been using? i know you mentioned liking it a lot.

My asparagus soup is basically just asparagus & organic vegetable or chicken stock (i.e. a 1 L tetra of IMAGINE brand), pureed. If you have a handful of fresh spinach toss that in because IT'S REALLY YUMMY. If you want it REALLY CREAMY toss in a mini white potatoe or two. If you are really inspired you can toss in a celery stalk or two, i.e. around half cup. If it's in you're fridge, a cup of fennel bulb really rocks. If you want it creamy but don't have potatoe in the fridge, try soy or rice milk (i.e. 1/4 c.--ish)

So, here's the recipe:

Ingredients:

--asparagus, 1 bunch (or a 10 pkg. of frozen)
--baby spinach, around 300g fresh (or 1 pkg. chopped frozen)
--1 L tetra of organic stock or organic bouillion cube
--herbs of choice IF DESIRED (honestly not necessary)
--IF it's in you're fridge, but don't RUN OUT ESPECIALLY FOR IT: a couple celery sticks if desired and/or about a cup of fennel bulb & fronds (that hairy green stuff) ***it tastes better with the fennel! *** if you don't want to bother with the potatoe just stick a cup or two of fennel in but only if you want to puree it. it's thickening and creamy enough)
--a mini potatoe or two if you want it REALLY THICK CREAMY and to totally up the SF content (the potatoe "starch" makes it creamy/thick versus rice or soy milk) Not really necessary if you don't have a mini potatoe.

***Note: you might need to add more stock or water depending on how much you put in the pot or how thick or thin you like it***

***IF YOU WANT IT REALLY fancy then reserve the asparagus tips and cook them separately/drain and garnish with them!***


PROCESS:

How to describe this? Basically let it cook then puree. A hand blender is just fine for this purpose. Then eat/enjoy???
Cook in order of toughness, but if you chop it all fine/thin enough I'd just put it in the pot & then bring to a boil. Then reduce heat & simmer until veggies are soft. Spinach, if using should go in last as it cooks ULTRA FAST. If it's chopped frozen, defrost in the microwave while the soup is simmering.

Note: I like to add a little bit of fresh ginger and at most 1 clove of garlic. If you have a little basil that's nice too.


SUMMARY: Ultimately, this soup is pureed asparagus in organic broth with optional add-ins! It's really fast & easy and yummy and CREAMY! Asparagus/fennel is a really yummy and tummy soothing combo.

2. Re: Rice Parmesan "Cheese"

It's made by SOYCO foods. It doesn't have that "is it rubber or postage stamp glue" taste that alot of soy cheeses that I've tried, have.

Calories: 2 tsp/15 calories
Fat: .5g
Carbss: 1g
Protein: 2g

I also bought the rice mozzarella but haven't gotten around to trying it yet.

I had such a D attack last night I wasn't up for posting.
I think it was the tofutti cc...it has hydrogenated oil in it and I think that's a big mistake for me.
I tried really doing the mini meal thing. It helped but I was still hungry at the end of the night. And I keep mistaking NOT being bloating for being hungry...I feel so empty I think I must need food...

B- Soy Yogurt, GF ricegranola, puffed millet
L- Spaghetti squash, shrooms and onions sauted in veg. broth, rice parm
S1- Gluten free pretzels, hm applesauce
s2- 2 Corn crackers with tofutti cc..ow!!!!
D- Quinoa with hm tomato sauce and spaghetti squash, pureed apple/pear sauce and brown rice

you're probably still hungry because you're not eating enough - at under 1200 calories you can definitely afford to eat more. then you can still do the mini meals - either make each one a bit larger, or add one entirely - without being over-hungry or deprived. aside from the ibs and energy benefits, the thing i really love about eating several small meals is that i'm almost *always* eating and never feel deprived.

I know. I weigh 130 lbs at 5'7.. so I really don't want to be losing too much weight. I've already lost 15 lbs in the last two months. I am happy with that and 5 more wouldn't hurt me any. But I certainly don't want to become a spaced out, malnutritioned twiggy I'm a philosophy student, I need my brain!
