The Gluten-Free Diet

Hi Everyone,

I just have to say that I've been on a gluten-free diet for 10 months now, and I have to say that the attacks have been reduced to probably one every two months, and they're half as bad as they used to be. Also, I take an anti-spasmodic that regulates everything. And I feel like I'm a normal person again. It works for me, and I hope it will work for someone else!

Can I ask what your normal daily food diet looks like on a gluten free diet? What you eat for B,L,D and snacks?

I am on a GF diet too, but finding it hard to "mesh" with Heather's diet as many of the GF foods are either 1) higher in Insolube fiber (like Millet) and don't serve well as a Soluble fiber base for veggies. 2) the bread tend to be higher in fat content and often made with whole eggs. and 3) We can't do most of the safer snacks like dried cereals, breads, pretzels, saltines, bagels... GF cereals tend to be made with brown rice which is more IF and not safe alone. The bagels and pretzels are sky high in fat (one bagel has 8 grams fat and the pretzels have 5 grams per ounce ) and the crackers tend to be brown rice too.

I found a millet flax gf bread, but again, that is not a safe soluble base.

We can't do oatmeal either, and the only hot cereals I have found our cream of brown rice or Bob's Red Mill Mighty Tasty hot cereal that contains whole Brown rice, buckwheat, and sorgham. The brown rice and buckwheat are not good SF foods to start the day with either

Even the noodles tend to be brown rice based with rice bran and or made with buckwheat. Not as safe as regular pasta for SF bases to veggies.

Please help me Can you give me some ideas??? How do we substitute our nonsafe Soluble fiber bases, which are the heart of Heathers Philosophy to eat first, for safer ones. Plain white rice gets boring and too many days in a row leaves me very constipated. I can only handle white rice or white rice noodles 2 times a week or so.

Can we do quinoa as a safe soluble base for our veggies? Is quinoa enough of a SF base?

Are you a D, C, or A, btw?

Hi Beth.

I have IBS-D. I eat gf because I find my mood and attention span is better gf. Also alot of the opiates in wheat, as well as yeasts interfere with some pills that I have to take. Also, I find wheat drains my energy and personally I think its addictive and it aggravates my IBS symptoms.

(I did try a little fresh bread a few days ago and felt like
"crap." Not just in a g.i. way.)

Re: Cream of white rice cereal. I use El Peto. They have a cream of white rice cereal. Have you checked out some of the health food stores? Some gourmet shops? There are more
white rice products available there. Asian shops too. I have some assorted shaped rice pasta noodles. Unless it's a really bad day, millet really agrees with me personally. Quinoa is lovely too. I just prefer millet to quinoa. Most
gf breads in the stores are disgusting. I just don't eat bread anymore. Being single it's just a waste of time. I do buy rice flour and make rice perogies and rice chapatis, etc. Usually, though it's only when I have company or people to share with. Being single I am pretty lazy. Do you eat potatoes? Just curious. There are all sorts of assorted rice varieties, beyond long grain white--white basmati, white jasmine, aborio. I just find that beyond a few rice cakes or rice crackers the IF in brown rice pasta a little to coarse and overwhelming.

Mostly, I either eat dry goods or just cook up a few servings of gf grain--yes, usually rice and use it for the day. It's kind of a food rut. Although, with IBS-D plain white rice suits me divinely. Seriously. I don't know--it's weird eating virtually the same grain everyday and awful not really caring much about cooking especially when you're single. It's embarrassing, frankly.
