Dill is really good with beets, too. Tomatoes and tomatoe products (and peppers) really cause me a lot of discomfort as well. I miss a good marinara or salsa, but the pain is just agonizing.

I've never tried beets w/rice vinegar - but I have had them with lots of other kinds of vinegars (seasoned red wine, seasoned white wine, balsamic etc etc etc) and oh, beets are so delish with the tang of vinegar (or lemon juice too). So I'll have to see if I can find some rice vinegar now!

I want to buy a dehydrator - Rachel Ray on 30 Min. Meals (on the food network I think) was making dehydrated root veg chips the other day with all these exotic root veggies (plus beets and sweet potatoes and such) and it looked SO GOOD!!

I want a dehydrator too! Beet chips rule. And carrot chips too. And zucchini chips. And sweet potatoe chips. And even turnip chips. Oh dear, yet another toy to acquire. Dehydrator dreams. I will put it on my wish list. Apple chips. Homemade and totally safe.
