I made risotto for the first time last night. There was a TON leftover. I ate some more tonight, but it was dry. What do you all do to make it not so dry but keep the flavor?

Add more vegtable stock and heat it up; stirring gently....also leftover risotto can be formed in to croquettes and pan fried- non stick of course....

Thanks so much! I cook all the time, but these risottos are a new thing to me. I just wanted to make it as yummy as possible. Thanks for the tips, I will be sure to use them!
