I just noticed you included pbj because very little prep needed.

One thing I always have in my bag when traveling is a peanut butter rollup, which is a flour tortilla with a teaspoon or so of pb rolled up and stuck in a baggie. If it's a long trip, I take two. Has saved my life more than once! (When I don't eat I get cranky and the people around me are not safe!!)

Provamel Soya desserts (I like Vanilla).
Sakata Salt and Vinegar Baked Crisps.
Bread rolls, especially with tuna mayo/crab paste/smoked salmon and avocado, but plain is okay I guess.
Corn cakes (like rice cakes).
