Keep getting confused about bread

I know you can only have white bread but does this mean you can have wraps, Crumpets, store bought white bread etc? Or does it have to be fresh bakery? I keep getting confused about being gluten free too. I'm not celiac so I guess I don't need to be but I sometimes think bread sets my ibs off.

Gluten is not a proven IBS trigger. However a carbohydrate called a fructan - a high FODMAP - found in wheat, rye and barley - is a proven IBS trigger. Here is a good explanation
