I have been following the recommendations in Heather's book for a while with very positive results. However, I have never eaten so much high GI foods in my life; french bread, bagels, potatoes, saltines, etc. The general recommendation to lower the GI for foods like this is to pile on fat or protein but they both contradict the book's recommendations. I suspect these same food are the ones helping. Is there another option or a reason not to be concerned?

I have read enough nutrition books that when I look at most any kind of food, I can think of a reason why it is bad for me. On this new diet, I can see fruits and vegetables in the bad group. It is challenging to learn because I don't get immediate feedback or symptoms from any food. Symptoms are mostly like a curve varying for no decipherable reason.
