Ok let me start this by saying I want to try and eat turkey, I can not cook it under any circumstances, I am terrified of raw poultry, so please suggest the safest source possible of cooked turkey, is it deli turkey organic, no night rates? Is it organic canned turkey? Is there a brand someone likes?

Look for Burns canned turkey. It doesn't contain nitrites (e.g. sodium nitrite). Not sure if it is available in the US - it is commonly available in canned. Be careful of canned or deli meats that say they don't contain preservatives but contain cultured celery extract. It is just natural source of nitrates and nitrites. You could also ask at the deli counter if they have turkey slices without preservatives. Some delis carry these sort of products.
